Kaneco played a pivotal role in the transformation of Liath, the acclaimed two Michelin-starred restaurant nestled in Blackrock Market, Dublin. Under the visionary leadership of Chef Damien Grey, the restaurant underwent a thoughtful redesign that doubled the kitchen’s size—redefining the space to support a more focused, immersive culinary experience. 

The kitchen was meticulously designed to facilitate Liath’s seasonal tasting menu, emphasizing small-batch, high-quality production. Kaneco’s contributions included the installation of advanced induction hobs and a high-tech oven controllable via Wi-Fi, replacing the traditional gas stove. A yakitori grill fuelled by sustainable lump charcoal was also introduced, aligning with the restaurant’s ethos of precision and environmental responsibility. 

Working closely with Chef Grey, Kaneco used on-site materials in creative and efficient ways to bring the project to life, crafting a kitchen that mirrors the restaurant’s refined, modern aesthetic. The resulting environment not only enhances operational flow but also reflects the restaurant’s commitment to craftsmanship and culinary innovation. 

Liath’s intimate 22-seat dining room places the open kitchen at its heart, allowing guests to experience the artistry and discipline that define each dish.
