The team behind Ómós chose Kaneco to equip the kitchen at the heart of their operation. Ómós is a 40-seat restaurant built around seasonal Irish cuisine and a deep connection to its local producers — a concept that demands a kitchen as considered and precise as the food it produces.
Kaneco designed and supplied a full commercial kitchen solution across approximately 180 square metres, tailored to the specific rhythms of the Ómós kitchen. The equipment package centred on Rational iCombi Pro combi ovens and an iVario Pro multi-cooking system, delivering the precision and versatility required for a producer-led, fine dining operation. Bespoke fabricated island counters bring the cooking line into view, housing heavy-duty dual-zone induction hobs as the centrepiece of a customer-facing kitchen.
Ventilation was specified to the highest standard, with Canopy extraction units featuring Jetstream+ technology and CleanStream UV-C air purification — ensuring a clean, efficient kitchen environment across a full dinner service. Cold storage was provided at scale, with multiple cold rooms and a dedicated freezer room delivering the capacity that serious seasonal cooking demands.
Working closely with the Ómós team and coordinating directly with the main contractor on-site, Kaneco delivered the full fit-out on programme — from early design through to final installation. The result is a kitchen built for craft, giving the Ómós team everything they need to explore what Irish seasonal dining can be.
